Israeli Pasta Salad

Summer time always brings out a chance to try new dishes.  Below is a recipe of my version of an Israeli pasta salad.  Enjoy something different, healthy, colorful, and of course delicious!

Israeli Pasta Salad

  • 1 lb Acini Di Pepe Pasta
  • 6 oz Dried Apricots
  • 6 oz Mission Figs
  • 1/2 C Red Grapes
  • 3 T Extra Virgin Olive Oil
  • 1 t Kosher Salt
  • 1 t Parsley
  • 1 T Black Ground Pepper (Season to taste)

Boil water and cook pasta as stated on box.  Drain and cool off pasta with cold water.  Dice the apricots, figs, and grapes.  Mix everything together in a large bowl.  Refrigerate for 20 minutes as it is best served when cold.
