Churros con Chocolate!

¡Hola! I am back in Vigo, España tasting some of the best local treats while exploring the city.  Late November in this part of Spain brings chilly weather.  This provides the perfect excuse to sample a local dessert. There are no words to describe the perfect combination of churros when pair with thick hot chocolate. The chocolate is nearly as thick as pudding and is used to dunk the churro. For all those chocolate lovers out there, this is a recommended treat whenever you visit the country of Spain.

Vigo has a nice historic center. Rua dos Cesteiros is one of the classic narrow streets in this part of the city. The name of the street literally means street of the basket weavers. The shops have all kinds of woven products from the widest variety of baskets to chairs.

Outside the history center is a much more modern city. Despite being car-friendly, it still was very pedestrian friendly. The locals shops and cafés are very inviting and tourist friendly making the city a delight to explore.

Israeli Pasta Salad

Summer time always brings out a chance to try new dishes.  Below is a recipe of my version of an Israeli pasta salad.  Enjoy something different, healthy, colorful, and of course delicious!

Israeli Pasta Salad

  • 1 lb Acini Di Pepe Pasta
  • 6 oz Dried Apricots
  • 6 oz Mission Figs
  • 1/2 C Red Grapes
  • 3 T Extra Virgin Olive Oil
  • 1 t Kosher Salt
  • 1 t Parsley
  • 1 T Black Ground Pepper (Season to taste)

Boil water and cook pasta as stated on box.  Drain and cool off pasta with cold water.  Dice the apricots, figs, and grapes.  Mix everything together in a large bowl.  Refrigerate for 20 minutes as it is best served when cold.

National Chocolate Chip Day!

On this sweetest of holidays pick up a bag of chocolate chips from your local grocery store and follow this tasty treat.

Chocolate Chip Oatmeal Cookies

  • 8 Tbsp of room temperature butter
  • 1 egg
  • 1/2 C Brown Sugar
  • 1/4 C White Granulated Sugar
  • 1 t Vanilla
  • 1/2 t Baking Soda
  • 3/4 C Flour
  • 1 1/2 C Oatmeal
  • 3/4 C Chocolate Chips

Mix the ingredients following the order above. Bake in preheated oven at 350F for 9-11 minutes. Will make about 2 dozen fabulous cookies.

HamCakes!

Baking provides a creative avenue and tasty treats. Last month I created these HamCakes with fellow blogger and burger fanatic fivefeettall. Yellow, green and red frosting’s were used to simulate the mustard, lettuce and ketchup.  I thought these HamCakes were perfect to celebrate National Hamburger Month.

The patty is a cutout brownie and the bun is vanilla cupcake. Sesame seeds were used to provide the finishing detail of the bun. When completed they looked like mini hamburgers and, when eaten, they provided a sugar overdose. By the end we had created enough of these pint-sized burgers to fill a sack of sliders.

Happy St. Patrick’s Day!

Dia duit (that is an Irish welcome phrase). I wanted to make some cupcakes for everyone for Saint Patrick’s Day. I baked delicious chocolate cupcakes, whipped up some green frosting and topped it with a cute hat. I hope you enjoy it and remember have a wonderful St. Patrick’s Day.
